In France (and French-based New Orleans, LA), this day is perhaps more appropriately named "Fat Tuesday", or Mardi Gras. It represents the end of carnival season before the onset of forty days of Lent, beginning tomorrow. In the old days, fats were prohibited during Lent and therefore had to be consumed beforehand, a fact which no doubt helped the French name the day their way.
